In our house dinner time is always manic with a toddler. It is nearly impossible to entertain a toddler and cook a gourmet meal with only one adult in the house. The quick and easy dinner can still be healthy and nutritious, and usually the one that doesn’t get rejected as soon as it is served. A handy tip is always make extra rice and noodles during the week to store in the fridge for those on-the-go days.
Vermicelli Noodle Salad
This is by far the quickest and easiest dinner to prepare. Our daughter loves vermicelli noodle salad and you can change up the ingredients to suit your toddlers taste.
Ingredients
- Vermicelli noodles
- Grated carrot
- Sliced capsicum
- Lemon wedge
- Sliced cucumber
- Steamed or Fresh snow Peas (or any type of green bean)
- Grilled chicken sliced
- Crunchy noodles (optional)
- Soy sauce
- Honey
- Garlic
- Lemon juice
How to make
- Soak vermicelli noodles in a bowl using boiling water.
- While noodles are soaking prepare vegetables and cook chicken slices.
- Remove noodles from water and place in a bowl.
- Place vegetables, chicken and crunchy noodles on top making sure each item is not mixed together.
- In a small dish or cup pour two tablespoons of soy sauce, one teaspoon of honey, a pinch of crushed garlic and the juice from the lemon wedge. Stir well.
- Place used lemon wedge in the bowl with other ingredients.
- Serve with dressing on the side for them to pour themselves.
Chipolatas and Greens
Another winner for a hungry toddler who cannot wait a single second for dinner.
Ingredients
- 2 Chipolatas (Pork)
- Continental Rice Pack: Spinach, Ricotta and Parmesan
- Steamed broccoli
- Steamed green beans (any variety)
- Vegetable oil
How to make
- Following the microwave instructions, cook the Continental rice pack. This side dish serves four, so once cooked you can easily store leftovers for the next day.
- Using stove top steam broccoli and beans.
- While the above are cooking heat a frypan with vegetable oil and cook chipolatas.
- Once cooked, serve.
Noodles and Steamed Veggies
I always cook too many noodles when I make pasta, so there is always leftover plain noodles in the fridge for another day. This meal usually only takes five to ten minutes to cook, so it is very handy on a busy day or when everyone is too tired.
Ingredients
- Noodles (spaghetti noodles)
- Sliced carrots
- Sliced celery
- Snow peas
- Frozen baby peas
- Olive oil
- Pinch of salt
- Pinch of Italian herbs
How to make
- On the stovetop steam carrots, celery, baby peas and snow peas for 5 to 10 minutes.
- Heat a frypan on medium heat adding noodles, salt. olive oil and herbs. Stir together until hot.
- Serve.
Pizza
Every toddler loves pizza and making it yourself means you can cater to the fussiest of eaters. You can also be creative and use flat bread or wraps instead of pizza bases.
Ingredients
- 1 Wrap
- 2 tablespoons of tomato paste
- 1 teaspoon olive oil
- Pinch of salt
- Crushed garlic
- Pinch of dried Oregano
- Grated cheese
- 2 slices of Ham (sliced)
- Chopped cherry tomatoes
- Spinach leaves
How to make
- Preheat oven on 180 degrees (fan forced).
- Line a baking tray with baking paper and place wrap on top.
- Using a small bowl mix tomato paste, olive oil, salt, garlic and oregano together.
- Spread the mixed paste evenly on pizza base.
- Evenly spread out ham, spinach, tomatoes and cheese on pizza base.
- Cook for about 10 minutes.
- Place on a large plate and slice.
- Serve.
