Making a Christmas Trifle is a tradition in my household. Every year Dean and I will prepare our trifle together the night before Christmas to feast on for Christmas Day.
The great thing about trifle is you can alter the ingredients to suit your tastes.

Ingredients
- 1 packet of strawberry or raspberry jelly
- 2 thin sponge cakes or jam scroll cake
- Vanilla custard
- 500mls whipping cream
- 1 punnet strawberries
- 1 punnet blueberries (fresh or frozen)
- 1 punnet raspberries (fresh or frozen)
- 2 medium bananas
- 4 wafer sticks (chocolate filled)

Step 1
Follow the directions for dissolving the jelly you are using, making sure you dissolve properly. I like to make my jelly up 2 nights before Christmas day or the night before I make up the trifle.

Step 2
Pour your cream into a large bowl and using the electric mixer whip until peaks start to form. Do not over whip your cream, because you want it to be light and fluffy. If you do not own an electric mixer, no worries, use your hand held whisk and start your arm workout.
Once you are satisfied with your cream put it aside and get out your choice of cake. I have used sponge cake in this recipe, but I would usually use jam scroll cake. If you are using a jam scroll cake then you will need to cut into medium slices.

Step 3
Grab your trifle bowl. I use a footed trifle bowl, because I love how it visually looks in the end.
Place your sponge cake in your bowl and lightly press down to cover the whole bottom and open up the cake slightly. If you are using jam cake place slices along the bottom until fully covered.

Step 4
Chop up your strawberries and bananas into thin slices. Place to the side with your blueberries and raspberries.

Step 5
You are now ready to start layering your ingredients.
Place spoonfuls of jelly evenly on top of the cake. It does not need to cover the whole cake. I usually use half of the jelly for the bottom layer and the other half for the top layer.
Pour custard next to cover the jelly.
Using a tablespoon, scoop out spoonfuls of cream on top of the custard and lightly spread out evenly to create a barrier for the fruit.
Place your sliced bananas and strawberries evenly on top of the cream and then sprinkle the amount of raspberries and blueberries on top of them.

Step 6
Repeat step 5 until your bowl is full. I find two layers is plenty.
Once your bowl is full garnish with your chocolate wafer sticks. I place three whole sticks in the middle and crush the fourth to sprinkle on top for decoration.
Place in the fridge overnight to allow the flavours to mix together.
